Appa making method

First, the rice is ground to make flour and water is removed. To that flour, an appropriate amount of water is added and kneaded with feet until it becomes thick. Once the thick dough becomes smooth and elastic, Appa Chheet is ready. From the dough kneaded the Previous evening, in the morning, it is first pressed with a small scoop and then placed in individual portions. Using a wooden mold, the 'Appa' logo of that specific Bhatta (family/clan) is imprinted, and then the Appa is prepared. To prepare Appa, previously wooden molds were used, but nowadays, plastic molds or a sufficient amount of dough flattened on a plate are used. The excess dough is removed with a small bamboo stick. This AppaWhen preparing it, a small support needs to be placed at the bottom to prevent it from collapsing. After firmly pressing it onto a flat surface, the mold is filled. The Appa is ready.
The pancakes prepared and arranged in this manner on the griddle are lightly heated and then pressed firmly with a roller/press. This is done to flatten them evenly from both the bottom and the top. After that, they are taken to be stacked even before they are fully cooked. The cooked and uncooked pancakes are counted by stacking them in different places. They are then taken to the front for processing.
